Here's a simple and delicious recipe for your spiced pumpkin soup:

Ingredients:

  • 1 small onion, finely chopped
  • 2 teaspoons of butter
  • 250g diced pumpkin
  • 1 teaspoon cumin seeds
  • Salt to taste
  • Water

Instructions:

Sauté the Onion: In a large pot, melt the butter over medium heat. Add the finely chopped onion and sauté until it becomes translucent.

Add Cumin Seeds: Stir in the cumin seeds and cook for another minute until they release their aroma.

Cook the Pumpkin: Add the diced pumpkin to the pot and stir well to coat with the butter and spices.

Simmer: Pour in enough water to cover the pumpkin. Bring to a boil, then reduce the heat and let it simmer until the pumpkin is tender (about 15-20 minutes).

Blend: Once the pumpkin is soft, use a blender to puree the soup until smooth.

Season: Taste and add salt as needed. If the soup is too thick, you can add a bit more water to reach your desired consistency. Add in some oregano and chilli flakes.

Serve: Ladle the soup into bowls and enjoy it warm. You can garnish with a sprinkle of cumin seeds or a dollop of cream if desired.
